Banana Pumpkin Muffins
ingredients
- 3 mashed browned bananas
- 2/3 cup pureed pumpkin
- 2 eggs – room temp
- 1/3 cup melted butter – unsalted
- 1 tablespoon vanilla extract
- 1 cup granulated sugar
- 1 teaspoon pumpkin pie spice
- 1 cup cake flour
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
optional
- 1/2 cup crushed walnuts
- 3/4 cup chocolate chips
Streusel topping:
- 3/4 cup flour
- 1/4 cup sugar
- 1 teaspoon pumpkin pie spice
- 1/4 cup melted butter
method
- Preheat your oven to 425f and prep your muffin pans with liners
- In a large mixing bowl or stand mixer, add your bananas, pumpkin, eggs, sugar, cooled butter, and vanilla – mix thoroughly.
- In a medium sized bowl, add you salt, baking soda and powder, pumpkin spice, and flours together.
- Slowly add in the dry ingredients into your large bowl, where the wet ingredients are. Mix until fully combined

Fold in your walnuts and chocolate chips – be careful not to overmix your batter.

Using an ice cream scooper, fill your muffin tins up.
Make the streusel topping:

In a medium bowl, add all your ingredients together.

Mix until combined, you want clumps.
- Top your uncooked muffins with the streusel.
- Bake at 425f for 5 minutes – this creates the dome on your muffin
- After 5 minutes TURN YOUR OVEN TEMP DOWN TO 350f and bake for 12-15 minutes.
- Allow muffins to cool for 10-15 minutes on a cooling rack before serving.
